Turmeric Eggs and
Pickled Carrot 

Ingredients:

  • 1 cup Apple Cider Vinegar

  • ¼ cup water 

  • 1 tbsp Sugar 

  • 1/2 tsp Salt 

  • 1 tsp Cold Grind  Turmeric 

  • 1/4 tsp Cold Grind  Garam Masala (optional)

  • 1/4 onion, thinly sliced 

  • ½ tbsp whole peppercorns

  • 1 Carrot diced to matchsticks

  • 3 Hard Boiled Eggs 


Directions:

  • In small saucepan bring vinegar, water, sugar, salt and spices to simmer.

  • Stir until sugar and salt dissolves.

  • Place in the onion, peppercorns, matchstick carrots and eggs in a glass jar.

  • Pour liquid mixture over eggs

  • Let cool a bit and then secure with lid.

  • Gently shake around and refrigerate up to 2 weeks.
