Fish with Roasted Red Pepper & Coriander Dressing

Ingredients:

  • 600 g boneless Fish Fillets ( cut into 3 inch pieces)

  • 1 large Red Pepper (roasted, peeled and diced) / canned roasted red peppers

  • 1 tablespoon Cold Grind Organic coriander powder/ Fresh coriander leaves chopped

  • 1/2 teaspoon Cold Grind Organic black pepper powder

  • 2 tablespoon lemon juice 

  • 3 tablespoons olive oil

  • 1 teaspoon Cold Grind Organic garlic powder

  • 2 tablespoons parsley (chopped)

  • 1  teaspoon Cold Grind Organic red chilli powder

  • Salt to taste

 

Directions:

  • Put fish in a large plate, sprinkle salt, 1 tablespoon lemon juice. Make sure to spread evenly onto every piece and set aside for 10-15 minutes.

  • Now heat 2 tablespoon of oil in a pan and add garlic powder and sauté for 2 minutes

  • Add roasted red peppers, coriander powder, red chilli powder, black pepper powder, parsley and mix well for 1-2 minutes.

  • Add remaining lemon juice and remove from the flame and put aside.

  • Now take a non stick grill pan and heat remaining 1 tablespoon of oil in it.

  • Add marinated fish pieces on it and cook for 2-3 minutes on each side.

  • Serve hot with the prepared coriander dressing. Enjoy :)
